as is the case for many fruit trees, olive treatments are practiced in winter with copper-based products; at the end of winter we proceed with treatments based on white oil, to eradicate the cochineal before it starts to develop again. Other treatments are practiced before flowering, with copper-based products and also with insecticides if insects are present. During flowering any treatment is avoided. Copper-based treatments are repeated in late summer and early autumn, accompanied by insecticide treatments against olive flies.
The fertilizations are practiced in late winter-early spring, in mid-summer when the plant is preparing the fruits and in autumn. Natural products are used, such as humus or manure, or slow release granular fertilizers.
The pruning of the olive tree is very particular, I think anyone, even a non-gardening expert, will notice if he is in an olive grove during the preparation of olive trees. Generally we proceed trying to keep the ratio between the wood surface and the leaf surface high, leaving as many young branches as possible; in addition to this, as you suggest, it is good to keep the canopy well ventilated, emptying it in the areas where it is densest, to allow the sun's rays to reach all the canopy.
